  1. Use Braun’s MQ 70 food processor accessory with its fine shredding blades to shred the courgettes.
  2. Start beating the eggs with the MQ 10 whisk accessory. Start slowly whisking the eggs in a bowl, then add the shredded courgette, parmesan, ricotta, chives, oregano through the filling tube, continuously whisking at a medium speed. Season with salt and pepper.
  3. Heat the butter and oil in a non-stick frying pan. Pour in the egg mixture and cook on low heat for 3 minutes until the bottom has set.
  4. Cover and leave for a further 5 minutes or until set on top, cut into wedges and serve.
Once cooled, slices of the frittata can be put in the freezer for storage. Simply defrost and reheat in the oven.
