After muffins crossed the Atlantic some years ago, they have become popular in many European countries. Why not try this recipe with coffee?
Ingredients (makes 15)
- 225 ml very strong, cold, black coffee
- 2 eggs
- 200 g sugar
- 225 ml yoghurt
- 125 g flour
- 2 teaspoons baking powder
Preheat oven and grease the tins with butter. Put the coffee, sugar, eggs and yoghurt into a bowl and mix well. Add the flour and baking powder until just combined. Spoon into the tins and bake at 200°C for 15-20 minutes.
